Welcome to this week’s kitchen mission, where we will transform premium cuts into an ultimate flavour festival. If you want to impress your next party or simply indulge in a luxurious weekend meal, go no further than this recipe for Sticky Maple Glazed Pork Belly Bites.

Using high-quality meat is the foundation of any delicious recipe. When you purchase pork belly from SaltBru, you are starting with a product that has the depth of flavour required for this recipe. These bites are meant to be crispy on the outside, tender on the inside, and covered in a sauce that hits every note from savoury to sweet.

Ingredients

For the Pork

  • 1kg SaltBru pork belly cut into 3cm cubes
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

For the Sticky Maple Glaze

  • 1/2 cup pure maple syrup
  • 1/4 cup soy sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon chili flakes (optional for a subtle heat)

Method

1. Prep the Pork

Begin by preheating the oven to 180 degrees Celsius. Ensure that your SaltBru pork belly cubes are fully dry using paper towels. Moisture is the enemy of crispiness, so dry them thoroughly. Toss the cubes in a large basin with the smoked paprika, garlic powder, salt, and pepper until thoroughly coated on both sides.

2. First Roast

Place the seasoned cubes on a wire rack positioned above a baking sheet. This allows heat to travel underneath the meat, resulting in a uniform crust. Roast for 45–50 minutes. You want the fat to have rendered significantly and the edges to be a rich golden brown.

3. The Glaze

While the pig roasts, heat the maple syrup, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, ginger, and chili flakes in a small saucepan over medium heat. Bring the mixture to a gentle simmer and allow it decrease for 8 to 10 minutes. The glaze should thicken enough to coat the back of a spoon.

4. The Sticky Coating

Once the pig has done roasting, place the cubes in a large mixing basin. Pour the prepared glaze over the sizzling pork and toss quickly until every piece is shimmering and coated.

5. Caramelize

Return the glazed bites to the wire rack or parchment-lined tray. Turn your oven up to 200 degrees Celsius or turn on the broiler. Place the tray back into the oven for 5 to 8 minutes. Pay special attention to them here. The sugars in maple syrup caramelize quickly, resulting in the trademark sticky, burnt finish.

Serving Suggestions

These pork belly nibbles should be served immediately while the glaze is still sticky and hot. They make an excellent appetizer with toothpicks, or you can serve them as a main course over a bed of creamy mashed potatoes or steaming jasmine rice. Because SaltBru delivers right to your door in Gauteng, you can effortlessly secure your materials without leaving your house, giving you more time to work on perfecting that glaze.
